The front-and-center paddle is mechanically linked to a conical valve inside the group head, putting the flow of water — and therefore the pressure on your coffee puck — entirely in your hands. Start with a gentle 3-bar pre-infusion, ramp to a full 9-bar extraction, then taper the pressure down to mimic a classic lever profile. A periscope manometer mounted on the group reads real-time brew pressure directly at the point of extraction.

Dual Boiler with Saturated Group
