Di Pacci — 83mm Flat Burr On-Demand Grind-by-Weight Espresso Grinder

Ceado Rev Zero WAM WBC Coffee Grinder — Black

The Ceado Rev Zero WAM is the grinder the World Barista Championship put on stage for 2026–2027, and it earns that by leaving roughly 2 grams of coffee behind instead of a chamber full.

The Rev Zero sits at the top of Ceado's flagship Rev series: 83mm RSZ83 Red Speed flat burrs, a 900W motor turning at 1,480 rpm, and the Weight Adjustment Module fitted as standard so the portafilter tares itself and the grinder stops at your target weight to within 0.1g. Output is 5.2 grams per second at espresso fineness, so a typical 18g dose lands in about three and a half seconds. Stepless adjustment is read digitally off the touchscreen rather than guessed from a collar, and the whole thing runs at a rated 62 dB — quieter than either of its siblings, which matters when the grinder lives a metre from a customer.

What separates the Zero from the Rev Titan and Rev Steel below it is Sweep Out Dual Spin: after each grind the burrs reverse briefly and throw the chamber clear, leaving about 2 grams inside and delivering 99% of the ground coffee into the basket. Ceado rates the Red Speed burr set at roughly 4 tons of coffee, the longest life in the range. This is the black WBC-badged version — since being named Qualified Espresso Grinder Sponsor for the 2026–2027 World Barista Championship, Ceado has applied the official WBC logo to every Rev Zero leaving the factory through to the end of 2027.

Key Features of the Rev Zero WAM

⚙️ Sweep Out Dual Spin

The burrs reverse at the end of every cycle and centrifugal force clears the chamber, so the next shot is ground coffee rather than yesterday's leftovers mixed with today's.

⚖️ WAM Grind-by-Weight

The portafilter cradle is a scale: it tares your basket, grinds to one of three programmed doses within 0.1g, and stops. No bench scale, no chasing a timer as the beans age.

🔴 RSZ83 Red Speed Burrs

Ceado's own 83mm flat set with a titanium-aluminium carbon nitride coating, rated at around 4 tons of coffee — roughly four times the life of the steel burrs in the Rev Steel.

🌡️ Grounds Temperature Management

A 2.5kg grind chamber, shaft insulation and managed internal airflow keep grounds cool through a rush, so the tenth shot of a peak hour tastes like the first.

🔒 Steady Lock Burr Positioning

A counter-expanding coupling offsets the thermal growth of the burr assembly, holding the gap — and therefore the grind — constant as the grinder heats up over service.

🧰 Three Screws to the Burrs

The top of the grind chamber comes off with three screws and the chute pulls out with one, and neither job loses your grind setting when you put it back.

Why ~2g of Retention Changes the Cup

Every on-demand grinder holds coffee between and around the burrs after it stops. That trapped coffee doesn't sit still — it degasses, it picks up heat from the burr chamber, and it goes into the next basket underneath the fresh grounds. On a busy bar you don't notice; on a specialty menu where the whole point is that the Kenyan tastes like the Kenyan, you do. Sweep Out Dual Spin exists to empty that chamber rather than manage it.

  • You pull the dose. The burrs grind forward at 1,480 rpm and 99% of the coffee drops straight into the portafilter.
  • The motor reverses for a programmable moment. Inertia throws the grounds clinging to the burr faces and chamber walls down the chute rather than leaving them to stale.
  • About 2 grams remain — enough to keep the burrs loaded, not enough to blend yesterday into today.

Two practical consequences follow. The first is flavour: aromatics that would have flashed off a warm chamber over ten minutes end up in the cup instead. The second is money — when you move the grind, you're purging a couple of grams to clear the old setting rather than a full basket, which Ceado puts at a saving of up to five doses per adjustment. On a bar that dials in three coffees a day, that adds up faster than most people expect.

Rev Zero vs Rev Titan vs Rev Steel

All three Rev grinders share the same 83mm platform, the same touchscreen, the same Steady Lock and Grounds Temperature Management systems, and all three ship with a WAM. The burrs and what they're tuned for are what actually differ.

Di Pacci recommendation: Buy the Rev Zero if your menu changes and you want people to taste the difference between the coffees on it — the Red Speed burrs and near-zero retention are aimed squarely at clarity. Don't bother if you pour four hundred flat whites a day off one house blend: the Rev Titan grinds the same volume with more body for less money, and you will not hear the difference through milk. Call us on (02) 9758 0760 and tell us your daily cup count — that number decides this, not the spec sheet.

What to Pair with the Rev Zero WAM

A grinder this precise is worth matching to equipment that can use the precision. These are the pairings we'd suggest, and each links to the full range.

Pair it with What it is Why it pairs well
Multi-group commercial machines Two and three-group espresso systems The Rev Zero's 5.2 g/s output keeps ahead of a two-group bar without a second grinder on the bench
Prosumer E61 and dual-boiler machines Flow-control and pressure-profiling home machines Profiling only shows what the grind allows — repeatable 0.1g dosing removes the biggest shot-to-shot variable
WDT tools, dosing cups and distributors Precision prep tools Fluffy 83mm flat-burr grounds channel if they aren't distributed; a WDT tool is the cheapest upgrade you'll make here
Single-origin and specialty roasts Freshly roasted beans Clarity-focused burrs reward light and medium roasts — this grinder is wasted on stale supermarket coffee

Who This Grinder Is For

✓ Ideal if you:
  • Run a specialty menu with more than one espresso and want each to taste like itself
  • Dial in often — a roastery lab, a rotating single origin, a competition prep bench
  • Want grind-by-weight built in rather than a scale balanced on the drip tray
  • Care about what a grinder costs to run: ~4 tons of burr life and a couple of grams purged per adjustment
  • Have a bar where noise matters and 62 dB is meaningfully better than the alternatives
  • Want the same grinder the 2026–2027 WBC competitors are using
✗ Consider alternatives if you:
  • Pour high-volume milk drinks off one blend — the Rev Titan or Rev Steel suit that better for less
  • Have less than 630mm of clearance under your overhead cabinets, or a bench shallower than 270mm
  • Make one or two coffees a day at home — a home grinder will not hold you back at that volume
  • Need one grinder to cover espresso and filter — the Rev Zero is built and rated for espresso, so look at the wider commercial range

Ceado Rev Zero WAM — Frequently Asked Questions

Does the Ceado Rev Zero need a special power point?

No. It runs on a standard Australian 10 amp outlet. The motor draws 900W at 220–240V, which is under 4 amps, so no dedicated circuit or electrician is required.

How much coffee does the Rev Zero actually retain?

About 2 grams sits between the burrs after the Sweep Out cycle, and 99% of each dose is delivered to the portafilter. The reverse spin runs automatically at the end of every grind and its duration is programmable, so you can lengthen it slightly if you're purging between very different coffees.

What does the WBC logo on this model mean?

Ceado was named Qualified Espresso Grinder Sponsor for the 2026–2027 World Barista Championship, and the Rev Zero is one of the two models competitors use on stage. Every unit built through to the end of 2027 carries the official WBC logo. It's cosmetic — the grinder is mechanically identical to a non-badged Rev Zero.

Can I use the Rev Zero for filter or pour-over as well as espresso?

Ceado builds and rates it as an espresso grinder, and the RSZ83 burrs are cut for espresso fineness. It will grind coarser, but if filter is a real part of your menu you'll get better results from a dedicated brew grinder alongside it. Call (02) 9758 0760 and we'll talk through what a two-grinder bench looks like.

How accurate is the WAM grind-by-weight, and can I turn it off?

The WAM doses within 0.1g and stores three programmable doses plus a manual option. By default it tares your portafilter and starts grinding when you insert it; PFA Bypass mode lets you insert the portafilter and start the dose from the touchscreen instead. The module is interchangeable and swaps out in under two minutes if it's ever damaged.

How long do the Red Speed burrs last, and can they be replaced?

Ceado rates the RSZ83 set at roughly 4 tons of coffee — the longest in the Rev range. The grinder tracks burr life and service history on the display. Replacement sets are available and our in-house service team fits them; the top of the grind chamber comes off with three screws and the setting survives the job.

Is the Rev Zero quiet enough for an open bar?

It's rated at 62 dB, which is the quietest of the three Rev models — the motor is separated from the burrs and mounted on a suspension system, and the 2.5kg grind chamber does a lot of the insulating. It's still a commercial 83mm grinder, so it isn't silent, but conversation across a counter survives it.

Will it fit under my overhead cabinets?

The grinder stands 630mm tall and takes up 200mm of width by 270mm of depth. Measure your clearance before ordering, and leave room above the hopper to lift it off for cleaning. If it's tight, tell us your bench height when you call and we'll suggest something shorter.
