Mix the powder with cold water, pour it into an SPM SP-range cold cream machine, and it dispenses as a dense, spoonable crema that holds a peak on top of a cup. It sits on an espresso, gets eaten with a teaspoon, or layers through any cold drink. One 500g pack makes approximately 20 serves at 100ml dispensed — 1kg makes 40 — and the product stores at ambient temperature until it goes in the bowl. What Caffè Crema Actually Is

Most Australian customers have never seen it, so it is worth being precise. Caffè crema is a coffee-flavoured cream base — sugar, skim milk powder, vegetable fats and soluble coffee — that is mixed with cold water and then churned and chilled in a dedicated cold cream machine. The machine does two things at once: it freezes the mix to just above set point and whips air through it, which is what produces the dense, glossy texture that a whisk or a siphon cannot reproduce.

  • Mix: two 500g packs whisked into 1.5 litres of cold water, rested ten minutes, whisked again and poured into the machine.
  • Freeze: the machine chills and aerates the mix; the first dispense of the day goes back into the bowl because it has not reached full texture yet.
  • Dispense: cup held directly under the tap, handle pulled in one steady motion, cup rotated slowly in a spiral to build a peak, handle released slowly. Hesitating mid-pull is what causes inconsistent texture.

The result is a topping with the sweetness and body of soft-serve but a clear coffee flavour, cold enough to hold its shape on an iced drink for the time it takes a customer to walk to a table. Dust it with cocoa and it sells itself on the counter.

What is caffè crema?

Caffè crema is a cold-dispensed Italian coffee cream — light, naturally sweet and dense enough to eat with a spoon. It is made by mixing a powder base with cold water and running it through a cold cream machine, which chills and aerates it. It is not espresso foam, whipped cream or a syrup, and it has been served in Italian cafés for decades.

Do I need a special machine for Corner Block Caffè Crema?

Yes. It is formulated specifically for cold cream machines, in particular the SPM SP and GT range, which includes the SP1 single barrel, the SP2 double barrel and the Nina 2L for home or small venues. How many serves do you get from a pack?

Approximately 20 serves per 500g pack at a 100ml dispensed serve, or 40 serves per kilogram — so about 400 serves from the 10kg box. The standard mix is two 500g packs to 1.5 litres of cold water, which fills a bowl for service.

Should I buy the 500g pack or the 10kg box?

Buy the 500g pack if you're trialling the drink or topping up between deliveries. Buy the 10kg box once crema is on the menu daily — a bowl fill takes two packs, so a case gives you ten fills at the lowest per-serve cost. Both sizes are the same product, and the packs inside the box are sealed individually so you only open what you need.

How do I mix and dispense it?

Add 1.5 litres of cold water to a sanitised jug, whisk in two 500g packs until well combined, wait ten minutes, whisk again and pour into the machine, then start it and turn to freeze. Send the first dispense of the day back into the bowl — it hasn't reached full texture yet. To dispense, hold the cup under the tap, pull the handle in one steady motion, rotate the cup slowly in a spiral to form a peak, then release the handle slowly. Hesitating mid-pull gives you inconsistent texture. Finish with a dusting of cocoa powder.

What can I make with it?

Two house serves cover most menus. The Piccolo Crema: fill a chilled double-wall piccolo glass with crema in a slow spiral so it peaks above the rim, dust with cocoa and serve with a teaspoon on the side. The Corner Block Iced: in a 400ml clear PET cup, add a layer of crema, fill two-thirds with cubed ice, add 60ml of espresso, top with another layer of crema peaked above the rim, dust with cocoa and serve with a teaspoon and straw on the side — leave it layered so the customer mixes it themselves.

Does it contain dairy, and is it gluten free?

It contains milk — both skimmed milk powder and milk proteins — so it is not suitable for dairy-free or vegan customers. It is gluten free, and it may contain traces of nuts, eggs and soya. The full ingredient list is in the specifications above and printed on every pack.

Does it need refrigeration, and when do I top up the bowl?

No refrigeration — unopened packs store in a cool, dry place at ambient temperature, with the best-before date printed on the front of the pack. For topping up, don't wait until the bowl is empty: once it's down to about 1.5 to 2 litres, mix one 500g pack with 0.75 litres of cold water using the same method and add it in. Topping up early keeps texture and dispense consistent through service.
