The Mignon Stark W is Eureka's grind-by-weight flagship in the compact Mignon body. It runs 65mm Diamond Inside flat burrs driven by a 320W AC motor at 1650rpm, and weighs the coffee as it falls rather than running the motor for a fixed number of seconds. Eureka's Instant Grind Weighing system holds the dose to within 0.2g, pre-calibrated at the factory so it works with any portafilter weight straight out of the box. Why Grind by Weight Beats a Timer
A timed grinder gives you the same number of seconds, not the same number of grams. That difference is invisible on day one and obvious by day ten, because everything that affects how fast coffee moves through the burrs changes while you use it.
- Beans dry out as the bag ages, so the same eight seconds produces a heavier dose in week three than it did in week one.
- A full hopper presses down on the burr chamber differently from one with 40g left, so the dose drifts as you work through the beans.
- Roast level, bean density and humidity all change flow rate, so every time you switch coffee the timer has to be re-learned from scratch.
The Stark W removes the variable instead of compensating for it. It weighs the coffee during the grind and stops at your target, holding ±0.2g regardless of what the beans are doing, with an anti-vibration mount so a knocked bench or an uneven counter doesn't corrupt the reading. You will still want a scale for weighing the shot in the cup if you work to a ratio, but you no longer need one to set the dose.
