Di Pacci — Gaggia La Giusta — 3 Group Commercial Espresso Machine

Gaggia La Giusta Tall Cup 3 Group Commercial Espresso Machine

Three independently controlled groups built for cafés that can't afford a bottleneck. The Gaggia La Giusta pairs heat exchange technology with individual temperature control on every group, so each head holds its own dialled-in profile regardless of what the other two are doing. Simultaneous brewing and steaming, five programmable selections per group, and a colour touchscreen console make it a machine your whole team can run consistently — not just your head barista.

Built by Gaggia Milano, the La Giusta reflects over a century of Italian espresso engineering. The 21-litre boiler keeps steaming temperature stable while the heat exchange coil delivers precisely heated brewing water on demand. Baristas can programme and recall shot volumes with one button press, purge each group between orders, and monitor water usage and filter life from the console. Tall cup clearance suits everything from standard espresso cups through to large takeaway formats.

Why This Machine Excels in High-Volume Settings

Heat exchange, without the compromise: the boiler holds steaming temperature while the heat exchange coil draws brewing water at the correct extraction temperature, so a barista can pull a double while another group froths milk with zero temperature lag between the two.

Independent control, group by group: each group manages its own brew temperature rather than sharing one setting across all three. That means a shift running three baristas on three different drinks doesn't force a compromise on any of them.

5 Programmable Selections

Each group carries five direct selection buttons for stored dose volumes and shot timers — 15 recallable profiles across the machine, so repeatable pulls don't depend on who's on the group.

Colour Touchscreen Console

Fast, on-the-fly access to brew parameters and settings through an integrated touchscreen, cutting training time for new staff and speeding up routine adjustments during service.

Water & Filter Monitoring

Tracks water consumption and filter replacement timing from the console, helping protect brew quality and flag maintenance before it becomes downtime.

USB Programming

Upload or copy dose and recipe settings via USB, so profiles stay standardised across a shift or across multiple machines rather than reprogrammed by hand each time.

Group Purge Button

A dedicated purge button on each group rinses grounds and re-stabilises temperature between shots, keeping groupheads clean and extraction consistent through a rush.

Dual Cool-Touch Steam Wands

Two insulated steam wands stay cool to the touch, letting staff texture milk for back-to-back orders without the fatigue or burn risk of a standard wand.

The La Giusta also runs an energy-saver mode that scales back heating during quiet periods without leaving the boiler cold when service picks back up — a genuine running-cost benefit on a machine that's on all day. Angled filter holders and an inclined control layout round out the day-to-day ergonomics.

Perfect For

Specialty Cafés

Barista-focused venues running high daily volume need reliable, programmable espresso. Heat exchange lets you pull shots and steam milk without a temperature trade-off.

Fine Dining Restaurants

Consistent, premium espresso service. Programmable groups mean floor staff can pull a café-standard coffee without full barista training.

High-Volume Venues & Events

Three groups running simultaneously with multiple baristas — built for the throughput of a genuine rush, not just a steady trickle of orders.

Corporate & Office Facilities

Professional-grade espresso for staff and visitors. Tall cup design comfortably handles paper, ceramic, and reusable cups alike.

Water Quality & Machine Protection

Water quality has a direct effect on extraction and on the long-term health of a commercial boiler. As a general guide for this class of machine:

Total hardness
Moderate range — prevents scale build-up while preserving flavour
pH level
Close to neutral — supports balanced extraction and protects internals
Chlorine
As close to zero as possible — avoids off-flavours and corrosion
Total dissolved solids
Moderate range — enough mineral content for good extraction
Chloride
Low — particularly important for stainless steel boiler longevity

Water that's too hard leads to scale build-up and reduced performance; water that's too soft can leave espresso flat. Installing appropriate filtration protects both your extraction quality and the machine itself — our team can advise on the right setup for your local water supply.

Frequently Asked Questions

What's the difference between heat exchange and steam boiler machines?

Heat exchange machines like the La Giusta brew and steam simultaneously from a single boiler: the boiler stays at steaming temperature while an internal coil heats the brewing water separately. Dual boiler machines use two separate boilers instead — faster temperature recovery, but a larger footprint. Heat exchange suits 3-group cafés where simultaneous brewing and steaming across multiple stations is essential.

Can each group be programmed with different drinks?

Yes. Each of the three groups has five programmable direct selection buttons — 15 profiles across the machine. You could set ristretto on button one, a single shot on button two, a lungo on button three, and so on, per group. Baristas recall the profile with a single press, and settings stay saved until changed.

How often does the machine need servicing?

As a general guide, commercial machines running high daily volume benefit from professional servicing roughly every six months, with lower-volume venues able to stretch to annual servicing. Daily backflushing and regular descaling with Gaggia-approved products protect boiler life and temperature stability. Di Pacci handles service scheduling and stocks genuine parts.

Does the tall cup design limit which cups I can use?

No — tall cup clearance is the height available above the drip tray, so it adds flexibility rather than restricting it. Standard espresso cups, takeaway cups, and larger mugs or bowls all sit comfortably. It's a more flexible setup than an espresso-cup-only machine, not a less flexible one.

What if we outgrow the 3-group configuration later?

The La Giusta 3 Group suits venues running high daily drink volume across multiple baristas. If your business grows beyond that, a larger Gaggia configuration or a second machine are both realistic paths. Talk to our team about projected volume and we can help spec the right setup from the start.

What's covered under warranty?

Full warranty terms for new and pre-owned machines are set out on the Warranty tab on this page. Di Pacci's in-house technicians handle warranty claims directly — no third-party dealership delays.

How do I arrange installation?
