Di Pacci — 65mm Flat Burr Hands-Free On-Demand Espresso Grinder

Mahlkönig K30 Vario Air Coffee Grinder

The Mahlkönig K30 Vario Air starts grinding the moment you slide the portafilter in, and its active cooling keeps the grind steady through a long day.

The Mahlkönig K30 Vario Air is a commercial on-demand espresso grinder with 65 mm special steel flat burrs, an 850 W motor and an average output of about 4 g per second. Insert the portafilter and it grinds hands-free into the basket, using single and double doses set on push buttons with an illuminated display.

"Air" refers to its electronically controlled ventilation, which actively cools the grinder so it can run high daily volumes without the grind drifting. Grind adjustment is stepless, the built-in hopper holds about 1.5 kg, and the compact 24 cm wide body won a Red Dot design award.

Key Features of the Mahlkönig K30 Vario Air

🙌 Hands-free grinding

Grinding starts when the portafilter is inserted, leaving both hands free.

🌬️ Active cooling

Electronically controlled ventilation keeps the grinder cool under heavy use.

⚙️ 65 mm special steel burrs

Wear-resistant flat burrs for consistent espresso grinding.

🎛️ Single and double doses

Push buttons set and recall doses, shown on an illuminated display.

🎚️ Stepless adjustment

Fine-tune grind size without fixed steps.

📏 Compact footprint

24 cm wide and 55 cm high, so it fits beside a busy machine.

Why Active Cooling Matters on Busy Days

Grinding generates heat. On a busy morning a grinder can heat up enough to shift grind size and warm the coffee.

  • The K30 Vario Air monitors and cools itself with electronically controlled ventilation.
  • Cooler burrs hold their gap, so the grind setting stays where you put it.
  • Cooler grounds keep more of the coffee's aromatics for the cup.

That steadiness is what lets a cafe push high daily volumes without constant re-dialling.

K30 Vario Air vs Mazzer Kony S Electronic

Two compact on-demand grinders: flat burrs and hands-free start versus conical burrs.

Feature K30 Vario Air Mazzer Kony S Electronic
Burrs 65 mm flat 63 mm conical
Motor 850 W 450 W
Burr speed 1350 rpm 420 rpm
Hopper 1.5 kg 1.3 kg
Weight 13 kg 20 kg

Di Pacci recommendation: Pick the K30 Vario Air for hands-free speed and clarity from flat burrs. Choose the Mazzer Kony S Electronic for the fuller body of conical burrs in milk drinks. Don't buy the K30 if you need a current-model grinder with years of factory updates ahead; ask us about Mahlkönig's newer E-series.
