Di Pacci — Multi-Boiler Pressure-Profiling Commercial Espresso Machine

Synesso MVP Hydra Coffee Machine

The Synesso MVP Hydra gives every group its own pump, motor and brew boiler, so each barista can run a four-stage pressure profile without affecting the group next to them.

The Synesso MVP Hydra is a 1, 2 or 3 group commercial machine with an independent pump and motor per group and a 1.9 litre brew boiler per group, plus a shared steam boiler of 3.2 to 12.3 litres depending on size. Each group runs four-stage pressure profiling: pre-infusion, ramp up, full pressure and ramp down.

Because no group shares a pump, one barista pulling a long pre-infusion doesn't change the pressure on the shot next door. Synesso adds four magnetic flow meters, detailed shot-timer displays, adjustable water counts and selectable brew modes, plus automated backflush cleaning. It's built for specialty cafés serving demanding espresso menus; if you just need reliable volumetrics, it's more machine than you need.

Key Features of the Synesso MVP Hydra

🔧 Independent pump per group

Each group has its own pump and motor, so pressure stays steady whatever the other groups are doing.

📈 Four-stage pressure profiling

Programme pre-infusion, ramp up, full pressure and ramp down to bring out sweetness, acidity and texture.

🔥 Brew boiler per group

A 1.9 L brew boiler on each group lets you hold different temperatures for different coffees.

💧 Magnetic flow meters

Four-magnet flow meters improve volumetric accuracy shot to shot.

⏱️ Detailed timer display

Each group shows shot time so baristas can track consistency during service.

🧼 Automated cleaning

A programmed backflush cycle makes the end-of-day clean quicker and more consistent.

How a Pump Per Group Changes Service

Most multi-group machines share one pump. When two baristas start shots at different moments, pressure can dip or overshoot on one group as the other draws water.

  • On the MVP Hydra, each group has its own pump and motor, so pressure is controlled independently.
  • Each group runs its own four-stage profile: pre-infusion, ramp up, 9 bar extraction and ramp down.
  • Separate brew boilers let a single origin and the house blend run at different temperatures side by side.

The result is the same profile delivered every time on every group, which is what lets a specialty café serve several coffees at once without compromise.

Di Pacci recommendation: The 2 group is the sweet spot for most specialty cafés. Don't bother with the Hydra if your menu is one blend through milk and you don't plan to use profiles; a volumetric machine like the Wega Polaris TRON costs far less to buy and run.

Grinders for the MVP Hydra

Pressure profiling exposes grind inconsistency quickly. These grinders keep up.

Grinder Burrs Why it pairs well
Mahlkonig E80 Supreme 80 mm flat High-volume consistency for the house espresso
Mazzer Major V Electronic 83 mm flat On-demand doses with GFC for busy groups
Ceado E37Z Naked 83 mm flat, DLC Single-dose grinder for a rotating guest or filter-roast espresso
