ACS Ventus Lever Coffee Machine

The ACS Ventus is a Naples-built spring-lever machine for people who want espresso made the traditional way, with a lever doing the work instead of a pump.

The ACS Ventus pairs a commercial-grade spring-lever group with a 5 litre insulated stainless steel heat-exchanger boiler, a rotary pump for line pressure and a plumbed mains water connection. You lift the lever to let water onto the puck, then the spring drives the extraction at a naturally declining pressure, with a screw on the group neck to adjust pre-infusion flow.

ACS designed the Ventus in Naples, drawing on the company's love of sailing for its lines. Beyond the look, it's practical: a joystick steam valve, a separate hot water wand, a boiler pressure gauge and a 58 mm portafilter mean it handles milk drinks as easily as straight espresso, and the lever mechanism is quiet in use.

How a Spring Lever Shapes the Shot

On a pump machine, pressure is roughly constant for the whole shot. On the Ventus, a compressed spring provides the pressure, and it naturally eases off as the spring extends.

  • Lift the lever: the piston opens the group and boiler-heated water flows onto the coffee for pre-infusion.
  • Release the lever: the spring pushes the piston down, building pressure quickly to its peak.
  • As the spring extends, pressure tapers toward the end of the shot, reducing harsh late extraction.

The result is the classic Neapolitan-style espresso: syrupy, sweet and lower in bitterness, with the theatre of a lever pull every morning.
