A heat exchanger (HX) machine uses a single large boiler held at steam temperature, with a copper or stainless tube (the heat exchanger) running through it. Cold water for brewing passes through this tube and is heated to brew temperature before reaching the group head. This allows simultaneous brewing and steaming from a single boiler β€” something a basic single boiler machine cannot do. A dual boiler has two completely separate boilers: one for brewing held at exact brew temperature, and one for steam. The dual boiler offers more precise brew temperature control. The Technika V's PID and the E61 group's thermal mass compensate for most of the temperature variation inherent in HX design, making it an excellent performer at its price point.
The Technika V Profi PID largely eliminates the need for temperature surfing that was common with earlier HX machines. The PID controller holds the boiler at your set temperature with precision, and the E61 group head provides significant thermal mass and stability. However, like all HX machines, the brew water temperature can still be influenced by how long the machine has been running and how recently a shot was pulled. Learning your machine's warm-up behaviour and pulling a brief flush through the group before your shot is still best practice β€” though this takes only seconds rather than the extended surfing required on older HX machines.
Yes β€” this is one of the Technika V's defining practical features. It comes with a 1/8–3/8 BSPP plumbing hose and can be connected directly to a mains water supply, giving it an unlimited water supply. This is particularly useful in an office or workplace setting where refilling a tank multiple times per day is impractical. The switch between tank and plumbed supply requires no tools. Note that when plumbed, a water filter and pressure regulator are strongly recommended to protect the machine from scale and excessive incoming pressure.
